Quartz and granite end up on the same shortlist in almost every project, and the choice is usually made on the wrong information. Both are excellent. They fail in different ways, and that is what should decide it.
The one real difference
Granite is natural stone, cut from a quarried block. Every slab is different, and no two kitchens get the same worktop. Quartz is engineered — ground stone bound with resin — so the pattern is consistent and predictable from one slab to the next.
That single difference drives everything else. If you want movement, depth and the certainty that nobody else has your worktop, granite. If you want an even, repeatable look — particularly a clean white, which does not really exist in natural stone — quartz.
Maintenance
Granite is porous and wants sealing periodically. It is not difficult and it is not frequent, but it is a thing you have to remember. Quartz is non-porous and needs nothing beyond normal cleaning.
If the honest answer is that you will never think about sealing a worktop again after the day it is installed, that is a genuine argument for quartz — and not one to be embarrassed about.
Heat
This one goes the other way. Granite handles heat better. The resin in quartz can scorch or discolour if you put a hot pan straight onto it, so quartz kitchens need trivets. Granite is more forgiving of the moment nobody was thinking.
Does the coast change the answer?
For the worktop itself, less than people expect — neither material minds humidity or salt air the way timber does. Where it does matter is the cabinets underneath and the hardware holding them together, which is a much bigger consideration in a Flagler Beach or coastal property than the choice of stone on top.
The other coastal factor is light. Homes near the water tend to get a lot of it, and bright natural light exaggerates the movement in granite. A slab that looks balanced under warehouse lighting can look considerably busier in a room with a wall of windows. Always see the actual slab, not a sample tile.
What matters more than either
How the worktop is templated. Both materials perform well when they are measured off cabinets that are already installed, and both cause problems when they are cut from a drawing. Seams landing in the wrong place, an overhang that is not consistent, a cut-out that does not quite line up — those are template failures, not material failures, and they are the faults people actually live with.
